is there a protocol around how to welcome new mappers?

welcome from me too! I’m doing some mapping in the Boston area. What I’ve found rewarding is to solve notes by people on the map. The other thing I would suggest is checking JOSM with the new “Misaligned TIGER” layer – there is a lot of new streets that you might find that have yet to be mapped. Battle Grid is also fun.
