A good project would be to go through all the state parks and see if they are consistent, or should be, in OSM. For example, right now Lost Creek is set up as national_park while East Canyon is set up as nature_reserve and functionally I don't see any reason for them to be different.

I don't know how to get the boundary information, but as far as I can tell, Echo State Park is missing from OSM. https://stateparks.utah.gov/parks/echo/
