Unfortunately it’s not possible to drive the car and at the same time take notes about streets and places, for example, but it’s possible to capture data that can be useful in several projects.
What I am recently using is:
- MozStumbler (to capture data for the Mozilla Location Service)
- Tower Collector (GSM cell towers for OpenCellID)
- OsmAnd or GPS Logger (to record GPX and send to OSM)

I also have OSMTracker, but I use it only when walking. Since I can’t actually use the phone while driving, I prefer the specialized GPS Logger (or OsmAnd when I need to route or see the streets where I am driving).

I think I will start using Mapillary more, currently have no good way of recording tracks with my iPhone, but when I can set up my Garmin Nüvi GPS unit I record tracks. I use Go Map! a lot when on the road, a quick way of adding gas stations, restaurants, and other I observe along the road (not while actually driving though, more actively as passenger, or when we stop for a break)
