They wind up in the same place as any other tags - in the database where they can be fetched from the api and from where they will be placed in the planet file each week.

Go to osm.org and if you click the plus symbol '+' on the top right corner of the map, then select 'data' you can select each individual element.
The map itself will only ever show a small subset of information, that doesn't mean the information itself is lost or not useful for non-graphical representation or custom rendering.

Have a play with OpenStreetBrowser. This has clickable POIs which make use of more of the tags:
