Locally
Living in the city center of Antwerpen I started around newyear 2008 with mapping most of the northern part of the old city center (between Leien and Schelde, north of Meir). A 'piece of cake' as I know most streets from walking around my area, and areal coverage of Antwerpen is perfect.
Motorbiking
While riding the motorbike I try to combine it with tracking. This is mostly limited to the 'big roads', but early 2008 the area between Antwerpen and Turnhout was mostly a blank spot. Most of the major roads in between now are mapped, some are still missing.
I try to do this on holidays too, but the opportunities for this are getting rare, Openstreetmap is improving fast. Tracks from my last years Dolomites trip were still completely in a blank area, so were usable to add some pass-roads, tracks from this years (may) Toscana trip were almost all already on the map! Things seem to go fast, but that is good.
Dog walking - bicicling
Smaller roads are done walking the dog, or riding the bicicle. The newly constructed park on the Antwerp left bank (Middenvijver) was partly mapped while under construction. As it was under construction it was possible to track some of the lakes, including places that have become islands now and have become inaccessible.

good job, i am from munich bavaria and i also ride my motorbike and my mountainbike always with GPS device (magellan explorist).
I hope one day we will find a GPS device in the market which can directly import OSM map data as a background map.

I didn't try it out yet, but it *SHOULD* be possible for some areas (including germany) with Garmin devices.
