You can add tags, through a hidden feature of editing a current tag and changing the key. MapZen POI collector is currently awaiting review by Apple.

JOSM Crash - 3 hours of work lost... :(

I'd recommend regularly saving and uploading so that you don't lose your changes. With recent versions of JOSM you can upload using the same changeset multiple times, rather than having to have a single changeset for each upload. The save regularly mantra comes from office documents, and applies here too.

My GPS works fine on the Eurostar and Thalys trans. The German intercity trains were a bit more intermittent in their reception.

I've used a bluetooth GPS with my phone for quite a while now. I never use the software that comes with the GPS if any actually does. Instead I've just used TrackMyJourney which will use bluetooth to connect to the GPS.

At the moment you do need that comma between the house number and the street name.

http://blogs.openstreetmap.org/ is where I find them out (I'm the maintainer). I use Google Reader which auto translates them all to English.

The consequences of paths not being rendered fully...

A path is a single groove worn by lots of walkers, in general you don't want to walk along them as they will often be muddy or difficult to pass. You should look to using highway=bridleway, cycleway or footway before even thinking about highway=path. You might be interested in the Style Editor.
