As far as I know, the Apollonia Eco-Park you mapped is also at some planning stage and is not an officially-declared Nature Reserve yet.
Israel has dozens, if not hundreds, of Nature Reserves in different proposal stages. Many of them have not made any progress for many years. In my opinion, there is very little value to the general public by mapping them in OSM, even if the mapping will be done using appropriate tagging. |

To override the default access to a highway, put the needed tags on the highway itself. For example, for highway=path the default access includes foot=yes and bicycle=yes so there is no need to put them on such highways. Best Regards,
